Stuffed Sausage Links

I wanted some thing simple for dinner tonight, and when looking through the fridge I saw sweet Italian sausage links, red peppers, sweet onion, and mozzarella cheese; and our dinner idea was born.  This is a super simple dish, but adds a little twist to the normal sausage and pepper.  Give it a try.

Ingredients

- 5 sweet Italian sausage links
- 1 small red bell pepper, diced
- 1/2 of a medium sweet onion, diced
- 8 oz of shredded mozzarella cheese
- 1 to 2 tsp of olive oil (for sauteing the onions and peppers)


1) Start by broiling your sausage on low for 5 minutes on each side.  Dice the pepper and onion and saute until tender.  And shred your mozzarella cheese.  Once the sausage is finished broiling, remove from oven and slice a pocket down the center of each link.  Make sure not to cut all the way through and be careful as they will be hot.  Fill each pocket with the sauteed peppers and onions and then top with mozzarella cheese. 


2) Turn the oven on to 400 degrees Fahrenheit after broiling the sausage (no need to wait till it is preheated, since the oven will already be warm).  Place the stuffed sausage in the oven for about 4 to 5 minutes or until the cheese is melted.  Remove from the oven and serve.


There you have it, simple stuffed sausage links.  These would be great with brown rice or a nice green vegetable.  I think next time I might actually try them on a roll, I believe they could make a very nice sandwich.  Try them some time and let me know what you think, and a little tweaks you may have made.
