Preheat oven to 350 degrees Fahrenheit
Ingredients
- 2 1/2 cups of old fashioned oats (your basic Quaker rolled oats)
- 2 cups of all purpose flour
- 1/2 cup of sugar
- 1 cup of brown sugar (I used light brown sugar)
- 1 tsp of baking soda
- 1 tsp of salt
- 1 cup of oil (The recipe called for canola oil, but I subbed it for vegetable oil, you could also sub it for 1 cup of melted butter as well)
- 2 large eggs
- 4 tbsp of vanilla extract
- 2 cups of semi-sweet chocolate chips (you could also use chocolate chunks)
1) Add the old fashioned oats, all purpose flour, sugar, brown sugar, baking soda, salt, oil (or butter), eggs, and vanilla to the bowl of a stand mixer.
2) Mix the ingredients together until the ingredients are combined and the dough is moist. (Note: your dough will be crumbly, that is fine)
3) Add the chocolate chips and mix.
4) Wash your hands and then using your hands grab about a tbsp of dough and squeeze together to form ball, then place on a baking sheet. If your dough really is not sticking together add a tbsp more oil; it is fine though if your dough ball is slightly crumbling, it will come together while cooking. Place in your preheated oven.
5) Bake your cookies for about 10 to 12 minutes or until golden brown and set up. Remove from the oven, allow to cool slightly then transfer to a cooling rack or plate.
There you have it, the BEST oatmeal chocolate chip cookies that I have ever tried. These cookies are amazing right out of the oven, just slightly cooled. The chocolate is so melty and gooey, they are so irresistible. These cookies are definitely going on my list of cookies to make at Christmas time. try them some time and let me know what you think.
